VLC Spices sources Whole Mace (Javitri) from Kozhikode and Thrissur, Kerala. Mace is the lacy aril around the nutmeg seed — inherently rarer than nutmeg. Blades range pale amber to deep orange-brown with intact lacy structure.
Flavour: More delicate and floral than nutmeg with warm cinnamon and pepper notes.
Uses: Mughal kormas, nihari, shahi preparations, bechamel sauce, kheer, halwa.
